Mango parfait with yogurt, granola & blueberries
If you want to start the day with a touch of the exotic, this mango parfait is just the thing for you! Layer by layer, it combines creamy yoghurt, juicy mango pieces, fresh blueberries, crunchy granola and a hint of coconut - a tropical, fruity dream to spoon up. Whether for breakfast, as a snack or as a light dessert - this parfait brings color and freshness to the table and is very easy to prepare.

For the granola
- 100 g rolled oats
- 50 g chopped pecans (or other nuts of your choice)
- 2 tbsp coconut oil
- 2 tbsp honey (or maple syrup)
For the mango yogurt
- 4 ripe mangoes
- 150 g fresh blueberries
- 400 g Greek yogurt
- 1-2 tbsp honey (to taste)
To garnish
- 2 tbsp grated coconut
Preparation
- Preheat the oven to 160 °C. Mix the rolled oats and nuts in a bowl. Heat the coconut oil and honey in a small pan until everything has melted.
- Pour over the oat mixture, mix well and bake on a baking tray for 20-30 minutes until golden brown.
- Then leave to cool.
- Cut two mangoes into small cubes, puree the other two. Wash and drain the blueberries.
- Mix the mango puree with the yogurt and honey to form a smooth cream.
- Alternate layers of mango yogurt, mango cubes, blueberries and granola in glasses.
- Garnish with grated coconut and fresh blueberries – done!
