Homemade wild garlic pesto
When the forests and meadows glow in fresh green in spring, it's finally wild garlic time again! The wild relative of garlic is not only wonderfully aromatic, but also very healthy. So it's perfect for making a spicy pesto that is easy to prepare at home. Whether as a pasta accompaniment, as a spread on bread or as a topping for roasted vegetables - homemade wild garlic pesto is a real all-rounder. And the best thing is: with a few tricks, it will even keep for several weeks!

- 100 g fresh wild garlic
- 50 g grated Parmesan cheese
- 30 g pine nuts
- 150 ml olive oil
- 1 tsp lemon juice
- Salt & pepper to taste
Preparation
- Wash the wild garlic thoroughly and pat dry – preferably in a salad spinner.
- Put all the ingredients – wild garlic, pine nuts, Parmesan, lemon juice and about half the oil – in a blender or chopper.
- Blend briefly until you have a coarse, creamy mixture.
- Then slowly add the remaining oil until the desired consistency is reached.
- Season with salt and pepper and mix again briefly.
- Then pour the pesto into a sterilized screw-top jar and cover with a thin layer of olive oil. This will keep it fresh for longer!
