Mango parfait with yogurt, granola & blueberries

Layer by layer, it combines creamy yoghurt, juicy mango pieces, fresh blueberries, crunchy granola and a hint of coconut - a tropical, fruity dream to spoon up. Ingredients
For 4 portions
For the granola
- 100 g rolled oats
- 50 g chopped pecans (or other nuts of your choice)
- 2 tbsp coconut oil
- 2 tbsp honey (or maple syrup)
For the mango yogurt
- 4 ripe mangoes
- 150 g fresh blueberries
- 400 g Greek yogurt
- 1-2 tbsp honey (to taste)
To garnish
- 2 tbsp grated coconut
Preparation
1. Preheat the oven to 160 °C. Mix the rolled oats and nuts in a bowl. Heat the coconut oil and honey in a small pan until everything has melted.
2. Pour over the oat mixture, mix well and bake on a baking tray for 20-30 minutes until golden brown.
3. Then leave to cool.
4. Cut two mangoes into small cubes, puree the other two. Wash and drain the blueberries.
5. Mix the mango puree with the yogurt and honey to form a smooth cream.
6. Alternate layers of mango yogurt, mango cubes, blueberries and granola in glasses.
7. Garnish with grated coconut and fresh blueberries – done!
